After losing my father suddenly on Valentine's Day 2004, I got so much support and love in the year that followed, I knew that I want to “give back” as a away to say thank you. So I created the I LOVE CORN Cookbook in 2007, which includes 50 corn-centric recipes donated by famous and award-winning chefs from across the country. It is a fun way for me to both honor my father and support a great cause! 75% of the proceeds will go directly to The Dougy Center.
The Dougy Center, is the National Center for Grieving Children & Families. It’s an organization that supports children and young adults who have lost a parent - and also trains facilitators at 500 plus locations around the world to support children in centers just like theirs.
I love all the recipes in I LOVE CORN, but there are two that stand out:

It’s always a crowd pleaser! Easy to make, light, zesty and just a touch creamy... perfect for summer gatherings!

They are totally addictive! The red curry paste makes them slightly spicy, but the sugar and coconut gives them a subtle sweetness too... and the pairing with the pickled cucumbers and shallots is to absolutely to die for!
