Local Chef's Guide To Key West
Chef Norman Van Aiken's Key West

"People think they've been to Key West because they've been on Duval Street. Key West is one of the most magnificent places, but not for lower Duval Street. There are lots of other reasons." - Chef Norman Van Aken

Chef Norman Van Aken moved to Key West in the early 1970's, when the town was made up of "little joints, cafes, barbecue stands, and Haitian shacks." While he went on to become known around the world as "the father of New World Cuisine," a combination of Latin and Caribbean influences, he's always remained connected to the soul of the Conch Republic.

Here are some highlights from chef Norman Van Aken's local recommendations for eating and drinking around Key West.

RECIPE...

Norman's recipe for Conch Salad with Watermelon.

"Many people never have the treat of tasting fresh conch. I often tell people to substitute fresh clams, but with overnight delivery systems in place, this makes almost every ingredient available. Conch freezes very well, so if you were to buy a few pounds, you could have some for the next time you want a taste of one of the luxuries of the Caribbean."
