It's the city that never sleeps, which means there's a great choice of grub beyond the bewitching hour. If you're a chef, after midnight is prime time for dinner. So, we asked some of New York's finest toques where they go to burn the midnight oil.

1. BLUE RIBBON BRASSERIE

The Beef Marrow with Oxtail Marmalade has been luring chefs here for over a decade.

2. SAKE BAR HAGI

This subterranean Times Square hideaway is great for Japanese pub fare: yakitori to udon to dried skate fin.

3. DADDY-O

It's all about the burger and cocktails at this West Village chef hang.

"I love the vibe there. I go for the Negroni with Aperol instead of Campari, they serve it in something that feels like a fishbowl."

4. SUSHI SEKI

This is where you'll see sushi chefs from around town eating, as well as people who know their fish. If you can, sit at the sushi bar.

"I like Seki, it's good. It's open late at night and after work is when you do most of your dining."

5. PHO 32

Serving Vietnamese noodle soup and Japanese shabu-shabu all night long.

"I don't get out the door to dinner at normal hours, so I tend to eat late. You go in and everyone is just coming out of the karaoke bars. I always get the # 6, the raw beef pho."
