It used to be said that absinthe made the mind go wander. The drink formally known as an illegal, hallucinogenic substance became legal again in 2007, after nearly a century-long hiatus.

Head barman Maxwell Britten of Maison Premiere in Brooklyn features over 25 different varieties of Absinthe on his menu.

Here are 5 things Britten wants you to know about absinthe.

1. Ingredients

All absinthe must be made with Wormwood, Lemon Balm, Hyssop, Anise, Fennel.

2. Two Distinct Expressions

Verte (green) is traditionally a French style and Blanche (white) is more typical of the Swiss style.

3. Flavor

Verte absinthes have bolder, more pronounced flavors, whereas Blanches are a little bit lighter and more subtle.

4. Hallucintions

The thujone content in wormwood is what causes hallucination. Researchers of absinthe say that there is probably more thujone content in a bowl of pasta with butter and sage, than there was in the pre-banned absinthe.

5. What To Buy

For a subtle introduction to absinthe, start off with a Blanche, such as the Germain Robin Absinthe Superieure. It is a very feminine style, mildly sweet, very minty with a hint of anise and wormwood. [buy it]

If you enjoy really aggressive flavors, try La Muse Verte from France. Its louche (opaqueness when the water hits the absinthe) is a dark green and it's mildly bitter with a thick body and a lot of citrus notes. [buy it]
