The new menu designed by chef Sunny Oh and myself is a passport to visit the flavors of Japan and the French Riviera, under the influences of the Caribbean and Latin America. My recommendations from our menu would be:
- Wagyu Short Rib Gyoza
- Watermelon and Cantaloupe Salad with Nudini Mozzarella
- Shrimp Tempura Dragon Roll
- Grilled Swordfish with Black Bean Sauce and Pineapple Chutney
- Tropical Bouillabaisse with local Rock Fishes
- Black Ink Risotto with Grilled Calamari.
We are in the French Caribbean, which means we get the best of the Antilles (West Indies) and France. But because we have a restaurant and many connections in Miami, we get also amazing products from the United States. In addition, we look for South American ingredients to make our food a terrific blend.

Juvia is about a concept created from, and for, the new Miami. It’s in a premium location, with sharp interior design. We won a James Beard Award for design. We have a beautiful open kitchen, a friendly, but strong and efficient staff, and a blend of Japanese, French and Peruvian cuisines that entertain a wide range of clientele.
Edible Souvenir | St. Barts
I would recommend bringing home a souvenir of rum infused with vanilla. It's the typical little “gift” that many restaurants offer you after your meal. Just to remember the good moments you had between friends during your trip.

Get the Gratin de Lambis here. A typical conches gratin, Creole style. The restaurant is maybe one of the most basic restaurants in St. Barts, but Mrs. Rolande is so nice and so much fun that she makes the place look cool.

This is a local creole chef. The restaurant is very open and casual. Try his Baked Snapper with Curried sauce ‘Chien.’ Un délice!
