Who

Chef David Kinch is the chef/owner of the two-Michelin starred Manresa in Los Gatos, California.

Why

New Orleans native Kinch cites working in chef Paul Prudhomme’s kitchen at Commander’s Palace, at 16 years old, as cementing his desire to become a chef. Currently, Kinch is considered one of the top chefs in the country for his European-influenced California cuisine.


Root Vegetable Choucroute

Ingredients

- 2 kilograms (4.4 lbs) Rutabaga

- 2 kilograms (4.4 lbs) Kohlrabi

- Fine sea salt

- 3/4 liter of mineral water

- Optional: batons of guanciale


Directions

1) Peel the root vegetables and cut them in a julienne of  3” by 1/8”.

2) Weigh out 2.25 kilograms of vegetables and place in a bowl.

3) Weigh out exactly 85 grams of fine sea salt.

4) Lightly toss to mix the vegetables and evenly distribute the salt.

5) Place the vegetables in a plastic bag, pour in the mineral water and press as much air out as possible and place in deep container.

6) Fill another plastic bag with water and tightly tie it shut.

7) Place on top of the vegetable bag to form a tight seal and to act as a weight.

8) Let rest in a cool dark space for 4 days and start to check it everyday after until it has reached the desired level of fermentation and flavor. 

9) Rinse lightly in cold water before using. 

10) It may be used raw or lightly sauteed with batons of guanciale.

11) You may store it in a mild brine solution of 1 coffee spoon of fine salt dissolved in 1 liter of water.
