Who

Marc Forgione is the executive chef and co-owner of Restaurant Marc Forgione, a Contemporary American restaurant in New York.

Why

Marc’s career began at 16, working in his father’s kitchen at An American Place. He went on to becoming the corporate chef of the BLT Restaurant Group and in 2008, he opened his own restaurant, which was recently bestowed a Michelin star rating.

Chili Lobster with Texas Toast

Yield

4 servings


Ingredients

- 4 x ½ pound cull lobsters, claws removed

- 1 cup lobster stock

- 2 tablespoons Sriracha

- 1 tablespoon light soy sauce

- 3 tablespoons unsalted butter

- 1 tablespoon chopped ginger

- 1 tablespoon chopped garlic

- 1 lime

- 1 tablespoon mint chiffonade

- 4 thick slices sourdough bread

- 2 tablespoons canola oil


Directions

1) Preheat the oven to 350 degrees F.

2) Bake the claws for 5 minutes and let cool to room temperature.

3) Remove meat from claws and knuckles and set aside.

4) Cut tails (with shells on) into 1 inch pieces.

5) Get a wok or large sauté pan, add canola oil and heat until smoking.

6) Add lobster tails, cook for 1 minute.

7) Add garlic and ginger and deglaze with lobster stock.

8) Remove lobster and arrange on 4 plates.

9) Reduce stock by half, add sriracha and whisk butter into the wok piece by piece.

10) Add soy sauce, a squeeze of a lime, salt and pepper to taste.

11) Add lobster claws and knuckle meat and finish with mint.

12) Spoon sauce onto plated lobster with one claw and knuckle on each plate.

13) Garnish each plate with a slice of toast and some scallion threads.
