Before opening Le Severo, the owner was a butcher from Nivernaises, so as you’d expect, it’s all about the meat here. But not just meat, old school meat - think Paris in the 1890’s. Boudin noir, fried pig’s feet, Lyonnais sausages, foie de veau, and of course steaks.
