'Tis the season for delicacies from the Florida waters. From October 15th until May 15th stone crabs are in season.
Here are a few useful stone crab facts:
- They are sustainable: it is nearly impossible to wipe out the stone crab population due to the fact that only one claw is taken per animal, they are then released live and are able to regenerate their claws.
- They are good for you: a healthy, low-fat source of protein, vitamin 6, selenium and magnesium. 4 oz raw portion = 60 calories, zero g total fat.
- They come in various sizes: they are graded based on ounce weight: medium claws weigh up to 3 ounces, large claws weigh between 3 and 5 ounces, jumbo claws weigh 5 ounces and up. Contrary to popular belief, stone crab claws are graded based on weight, not size.
- How to tell they're fresh: once cracked, if the meat comes off the shell easily it's fresh. If it sticks, they've been frozen.
