Starting this Monday, January 18th and continuing on Mondays throughout 2010, Gotham Bar and Grill will introduce "Mondays Uncorked." The deal is a $75 five-course prix fixe, regionally-inspired menu and no corkage fee. They usually charge you $55 to BYOB Two Buck Chuck. But here are their rules: you must bring a wine from the featured region and everyone at the table must order the prix fixe dinner. For 25 years, Gotham Bar and Grill has maintained its stellar reputation and three star status. How have they done it? Chef de Cuisine Jason Hall says ingredients are numero uno. Most of what they serve is made in-house, but there's nothing like Antica Cremeria butter from Emilia Romagna. It's made with the pasteurized cream from the same milk used to make Parmigiano Reggiano and stored in the same room, resulting in a unique nutty flavor. On their debut Italian night, they'll serve this butter with sheep’s milk ricotta agnolotti and bottarga. Executive Chef Alfred Portale is excited to try his hand at something different. Although he admits he cooks Italian food at home. When not at home, where does he go for Italian food? Restaurant and purveyor recommendations from Chef Alfred Portale and Chef Jason Hall are to the right. Check out our profiles of Chef ALFRED PORTALE and Chef JASON HALL. |
