Martelli Pasta

Del Posto, the most opulent of Mario Batali's restaurants, uses Martelli artisanal pasta for its nutty flavor. Acclaimed chef Pino Luongo at Centolire, ditto. The Martelli family has been producing premium durum wheat pasta since 1926 in the medieval town of Lari.


Piennolo Tomatoes

Del Posto also uses the small vine Piennolo tomatoes, grown organically in Mount Vesuvius National Park. They come with their own D.O.P. (Protected Designation of Origin) certificate.


Disisa Olive Oil

Franny's, the Brooklyn pizzeria that tops every chef's recommendation list, loves Disisa Extra Virgin Olive Oil for its fresh taste and green color. This Sicilian oil is made from Cerasuola, Biancolilla, and Nocellara del Belice olive varieties that are hand picked and cold pressed the same day in order to preserve their flavor.


Nettuno Anchovies

Roman's, in Fort Greene, uses Nettuno salted anchovies, which are fished from the Gulf of Salerno in Cetara on the Amalfi Coast. The anchovies are caught fresh and cured in oak barrels for about 5 months before being sold.


Piangrillo Olive Oil

Roberta's chef Carlo Mirarchi in Bushwick, thinks the taste of Pianogrillo Extra Virgin Olive Oil resembles tomatoes and suggests sprinkling it on "Ricci di Mare" (sea urchin). This organic oil is produced in the heart of the Monte Iblei Mountains in Sicily from 9,000 olive trees which have wild asparagus growing between them.
