Let's call it the mutual admiration society of chef and purveyors. The quality of one, helps the quality of the other. With farm-to-table being the latest restaurant trend, we asked chefs which farms they use, so you can get the same products to your own table.


BENTON'S SMOKY MOUNTAIN COUNTRY HAMS

The elite of the fine swine, this curly-haired breed was developed by Eastern European royalty and known for its marbled flesh and supreme porky taste. Order online.

PURE BRED / ELYSIAN FIELDS LAMB

"The marbling is highly unusual for lamb. So much flavor. The fat on it is very thick, like a dry-aged sirloin." Chef Jason Hall (Gotham Bar and Grill, NYC).
