Apollonia Poilâne runs Paris' most legendary bakery, Poilâne, which was started by her grandfather in 1932.
The Poilâne miche is considered the gold standard for Parisian bread and people like chef Alain Ducasse and Robert De Niro have the breads shipped to them from the bakery in Paris' Latin Quarter.
