Pitmaster: Rodney Scott

Scott’s

“When you flip your pig over and you put it belly-side up, that’s when we do our seasoning, after everything has been roasted. It works more heat on the bottom, while it’s cooking the skins that the pig sits in. To me, the smoke has a natural flavor that gives it that extra kick that lets you know you’re really eating barbecue.”

Recommendations:

Jim ‘N Nick’s - not only do I love his food, his barbecue pork, but also his banana creme pie. I love it! And Mike Mills - there is nothing else to talk about except ‘How are you? Where are the ribs?”
