Grilled Pizza Dough

Ingredients

- 1 package of active yeast

- 1 cup whole wheat flour

- 2 cups high gluten flour

- 1 cup all purpose flour

- 2 tsp sea salt

- 2 tsp honey

- 2 tsp olive oil

- 1.5 cups lukewarm water


Directions

Making the dough

1. In the bowl of a mixer fitted with a dough hook, stir the yeast, honey, and oil into the warm water until it dissolves.

2. Add the flour, give it a few seconds, then let it sit for 5 minutes.

3. Add the salt, mix well for one minute, and let rest a few minutes.

4. Knead for approximately 10 minutes, or until dough is smooth and elastic.

5. For first rising, shape dough into ball in mixer bowl and cover with damp cloth.

6. Let rise until it has doubled (at least) in size.

7. Punch dough down and cut into 6 pieces.

8. Form each piece into a ball and let rise for 2-4 hours.

Making the pizza

1. Roll dough into approximate 12-inch circle

2. Heat grill to 400 degrees.

3. Grill one side of the crust until desired crispness. Flip.

4. Add desired toppings—soft cheeses tend to work very well.

5. To help melt cheese and set toppings you can close the lid to your grill or place a large metal mixing bowl over the pie.
