Takashi's Easy BBQ Marinade Sauce

I’m happy to share my BBQ marinade sauce, which is very quick and easy. We use it for beef of course, but you can use it with other kinds of meats as well.


Yield

Serves 4 people for 1 pound of any cut of beef


Ingredients

- 1 cup soy sauce

- 2 tablespoon sake or white wine

- 8 oz orange marmalade

- 1 apple, quartered

- 1 oz grated garlic

- 1/4 cup sesame oil

- 1 tablespoon black pepper

- 1 tablespoon red chili powder

- 3 tablespoon crushed sesame seeds

- 1 tablespoon light brown sugar


Directions

1) Blend all ingredients in a food processor until well combined.

2) Marinate the beef in the sauce for about 10 minutes, massaging the meat to coat evenly.

3) Heat 1 tablespoon vegetable oil in  a grill pan on medium-high heat.

4) Grill beef pieces until caramelized.

Chef Takashi Inoue is the co-owner of Takashi, a yakiniku restaurant in New York’s West Village.

Why

As a third-generation Korean immigrant born in Osaka, Japan, chef Takashi uses his heritage for inspiration at his West Village meat mecca. He specializes in yakiniku, table-grilling Korean-style Japanese barbecue, and horumon, meaning discarded goods or the innards.
