Chef Giuseppe Tentori, of GT Fish and Oyster in Chicago, wants guests to feel like they have just stepped into an elegant stateroom on a sleek yacht when they enter his restaurant. But when it comes to eating his food, he prefers you think of a rustic fisherman’s cottage with a modern twist. His dishes range from Shark Tacos to Oyster Po’boy sliders with kimchi and peanuts. Originally from Lodi, Italy, Tentori was named Food & Wine “Best New Chef” in 2008 and a James Beard Foundation “Best Chef Great Lakes” nominee.
