Q. Have you had to temper spice or flavor in any way for Americans?

A. Only by choosing dishes I think the American palate is most likely to appreciate. 


Q. You’ve launched a line of drinking vinegars, Pok Pok Som... the best way to enjoy them?

A. In a cocktail or mixed with soda water as a non-alcoholic digestif or aperitif. The kids like it too.

It’s comically tiny and they jam people in like a clown bus, but the soba is spot-on delicious. I like the Pork Kimchee Soba, which I eat with a pint of beer while listening to the looping bizarre soundtrack.
