Q. Have you had to temper spice or flavor in any way for Americans?

A. Only by choosing dishes I think the American palate is most likely to appreciate.

Q. You’ve launched a line of drinking vinegars, Pok Pok Som... the best way to enjoy them?

A. In a cocktail or mixed with soda water as a non-alcoholic digestif or aperitif. The kids like it too.

Breakfast | Ha & Vl

Breakfast at Ha & Vl is a must; best Vietnamese noodle soups and coffee. They open 8am and are often sold out by noon. This place is special, it wouldn’t matter where it was, it’s special.

Lunch at Gruner is urbane, but simple and delicious. Chef Chris Israel, a former mentor of mine, has an almost perfect palate.

Food Carts | Nong’s Khao Man Gai

Lunch at Nong's Khao Man Gai food cart is a very good idea. I wish more Thai proprietors would follow her lead and specialize in one dish and crush it... just like they do in Thailand.

Best Hidden Gem Restaurant | Cocoron Soba

It’s comically tiny and they jam people in like a clown bus, but the soba is spot-on delicious. I like the Pork Kimchee Soba, which I eat with a pint of beer while listening to the looping bizarre soundtrack.
