We want diners to feel like they are coming to a fine dining restaurant, but in a more casual, friendly and less pretentious setting. The food is focused around local availability and products available from other regions during their peak season.
Gems on the Menu
I work very closely with our local farms, so the gem ingredients simply depend on the gorgeous produce they have in season.
Most Underrated Dish
I would say it’s the half roasted chicken with polenta and root vegetables. Chicken is one of those things most people can cook at home so they don’t want to order it when they go out to eat. I personally love chicken and could live off of it forever if I had to. The chickens come in fresh and then we brine them for 24 hours, then remove it from the brine and dry in the walk-in for another 24 hours, next day we rub lemon juice on the skin to help crispy it, rub with fresh herbs, salt and olive oil and in the oven they go. It’s so flavorful and succulent and pairs so well with the creamy polenta.
South Florida Benefits
The weather. We have great farming during the winter and spring months. Then in the summer we switch gears and use other farms such as Chef’s Garden. We are lucky to have fresh fish, lobster and crabs available to us daily.
Local’s Tip | Must-Try Delicacy
Stone crab claws during the harvest season which is from October to May. Just about any and all seafood restaurants will have it including 3030 Ocean.
