Is it blasphemy to mess with the classics? Not if it involves chocolate.

Somewhere, somehow, someone came up with the sacrilegious idea of adulterating Florida's official tart, the Key Lime Pie. They stuck it on a stick, froze it, and dipped in chocolate. It's a pie popsicle, a piesicle.

Key Lime Pies have a respectable amount of history, dating all the way back to 1856 when condensed milk was invented. There weren't a lot of cows roaming the Florida Keys, so pie makers were psyched about milk in a can. They added juice from Key limes, and the tourist must-have was born.

No longer just a Florida staple, they make a pretty good piesicle in Brooklyn. Steve's Authentic calls theirs the "Swingle" and sells them at their outpost in Red Hook.

Randy Essig, owner of Randy's Famous Key Lime Pie in Naples, FL, describes his as having pucker power. He'll ship them anywhere and anytime.

Key West Key Lime Pie Company boasts a First Place Prize from the 2009 American Pie Council championships. They sell their handmade pies at Macy's Cellar and the frozen bars online.
