Mayonnaise is one of the most user friendly staples in the pantry. It's classic, it mixes well in recipes, and it's a condiment that can swing from casual to fancy.
In honor of the fifth day of the fifth month, we asked Sergio Hernandez, cheesemonger and co-owner of Bklyn Larder, a specialty gourmet shop from the same crew behind the beloved Franny's, to list his top five favorite mayonnaises.

KEWPIE MAYONNAISE
It's a Japanese mayonnaise. I love the umami flavor.

THE BKLYN LARDER RECIPE
Ingredients:
1 (very fresh) egg yolk
2 cups of Frantoia Extra Virgin Olive Oil
1 tablespoon lemon juice
1 tablespoon white wine vinegar
1 teaspoon Trapani fine sea salt
Directions:
Put egg yolk in blender with lemon juice, white wine vinegar and salt.
Start blender on lowest setting (lid on).
Open blender while turning and slowly start pouring olive oil.
Gradually increase speed as you add olive oil, until emulsified and homogenous.
