Sir Kensington’s Easy Cheesy Meatloaf

Yield

Serves 6


Ingredients

- 1/2 cup onion, finely chopped

- 1/2 cup bell pepper, chopped

- 1 clove garlic, minced

- 1 1/4 pound lean ground meat (a combination of beef, pork and veal works well)

- 1/2 cup quick oatmeal or breadcrumbs

- 1 egg slightly beaten

- 1 1/4 teaspoon salt

- Pepper to taste

- 1/3 cup fresh parsley, chopped

- 1/2 cup crumbled Gorgonzola or other blue cheese

- 1/2 cup plus 1/3 cup Sir Kensington’s Classic or Spiced Ketchup, divided (Sir Kensington suggests using both flavors)


Directions

1) Preheat oven to 350° F.

2) In a medium size bowl combine the onion, bell pepper, garlic, meat, oatmeal or breadcrumbs, egg, salt, pepper to taste, parsley and 1/2 cup Sir Kensington’s Classic or Spiced Ketchup.

3) Mix with your hands or a spoon until uniform.

4) Line a rimmed baking sheet with foil and grease it.

5) Form 1/2 of the meat mixture into a rectangle in the center of the pan.

6) Crumble 1/2 cup cheese evenly over the meat mixture.

7) Place the other 1/2 of the meat mixture on top to form a loaf.

8) Spread 1/3 cup Sir Kensington’s Classic or Spiced Ketchup over loaf.

9) Bake in a preheated 350 degree F oven for about 1 hour, or until cooked through.

 


Sir Kensington’s Blue Balls

Ingredients

- 1 pound coarsely ground pork

- 5 tablespoons Sir Kensington’s Gourmet Scooping Ketchup (Spiced flavor)

- 1 cups fine bread crumbs

- 2 large eggs

- 1/2 stick melted butter

- Trader Joe’s Everyday Seasoning  (5 to 7 turns of the grinder)

- 5 oz any variety blue or gorgonzola cheese (cubed, larger than diced)

- Pita torpedo roll


Toppings

- Wasabi mayonnaise

- Shredded lettuce

- Diced tomatoes

- Diced sweet onion

- Bread

- Butter pickles


Directions

1) Mix the first 6 ingredients well.

2) Add the cheese.

3) Form into 2-inch balls.

4) Place balls on a rimmed cookie sheet that has been greased with olive oil.

5) Roast in a pre-heated 450 oven for 15-20 minutes, turning once so all sides get crispy. 

6) Serve in a pita torpedo roll with some or all of the following toppings: Sir Kensington’s Scooping Ketchup, wasabi mayonnaise, shredded lettuce, diced tomatoes, diced sweet onion, bread and butter pickles.
