Master sushi chef / owner Hidekazu Tojo was born in Kagoshima in southern Japan and learned to cook at an early age in Osaka. After being frustrated with always eating traditional Japanese food in the same order, he wanted to create something original. Tojo prides himself on creating non-traditional sushi.
