Q. You are doing a pop-up restaurant this summer in the Hamptons. How did you decide to open on Long Island?

A. While searching for a spot for a pop-up restaurant for the summer, The Hamptons came to mind. The Highway Diner was kind enough to provide us with this great location. The weather is beautiful, the people are easy going, and the beach is less than a mile away. We are lucky to have access to local ingredients, such as fresh fish.


Q. What local fish can you recommend we try when we come to Shuko? 

A. Delicious fluke is provided for us straight from the local fishermen of The Hamptons. One of our signature dishes, the Long Island Fluke, consists of sliced almonds, pickled tomatoes, and orange oil for an added burst of flavor.

Q. What unusual fish should we try when we come to Shuko?

A. Black fish is unique because while it is a rarity in the United States, it is commonly enjoyed in Japan. Therefore, we have sourced it directly in order to serve our guests the most authentic Japanese cuisine. I highly recommend it to first timers.
