The Experts...
- Masa Miyake (Miyake and Pai Men Miyake in Portland, ME)
- Tyson Cole (Uchi and Uchiko in Austin, TX)
- Kristofor Lofgren (Bamboo Sushi in Portland, OR)
3 moves that make sushi chefs cringe:
Masa: Piling spicy mayonnaise all over your food. It completely negates any kind of finesse the dish once had.
Tyson: Mixing wasabi into the soy sauce - it's amateur.
Kristofor: Dunking your sushi rice side down into an excess amount of soy sauce.
3 ways to show them you're a pro:
Masa: Eat the daikon radish provided with the sashimi. This is very traditional in Japan and it's a good sign that someone is experienced.
Tyson: Eat all sushi with your hands in one bite.
Kristofor: Eat your fish from least oily to most oily (e.g. mackerel first, salmon belly last). This is so you don't impact your palate by coating it with oil early in the meal.
