Q. What was the inspiration for the new book and including your personal stories?
A. I wanted people to know about the struggles I went through with getting to where I am today. Restaurant Marc Forgione has been open now for almost 6 years, but it really almost didn’t survive. I think a lot of people assume that because of my dad everything was laid out for me, but opening my first restaurant was the most life-threatening experience I've ever been through. I just felt like this was an important story to tell because I want young chefs to understand that when things get difficult you just have to keep at it.
Q. The recipes have a range from easy to more advanced. Which recipes can you recommend for a less advanced home cook and which for a pro?
A. My mother said it best, ‘you really have to figure out how I cook.’ It’s like dancing, once you get my moves, you’ll be able to keep up with me. I would start with the Spring Caesar Salad or the Marinated Cherry Tomatoes from the halibut and slowly, once you start to figure out where I’m coming from, in no time you’ll be making the Hampshire Pork Tenderloin or Suckling Pig Face.

This is one of my go-to spots. I love coming here as much as possible and I always know I’m going to have a great meal. The food is soulful and smokey. You know when you order the sardines out of the oven that they are going to be delicious. The baby octopus with the chilies - I just love it!
