Credited with helping to revive Boston’s cocktail scene and locally referred to as the “Oracle of Tiki,” bartender, DJ and musician Brother Cleve is one of the most respected barmen in the city. He fell in love with cocktails while touring with the band Del Fuegos in the ‘80s. While on the road, they found a little spot in Cleveland, Ohio, with an extensive drink menu listing about 75 to 80 different cocktails. “I thought, ‘What are all these? What the hell is a Side Car?’ It didn’t have any recipes or anything, it just had all these names. I walked out of that little diner and went to a nearby bookstore and bought an old Mr. Boston’s Bartending Guide.” The rest, as the overused adage goes, is history.

Cactus Flower

It’s one of my favorite of my own Tiki creations. I created it for Tales Of The Cocktail in 2009 and it was featured at an outdoor Tiki Party. Cruzan rum was a top sponsor, so I decided to put their entire portfolio into one drink. This is my homage to Don The Beachcomber and some of the insane combinations of spirits and modifiers that he built. Yes, there are 11 ingredients in this. The Prickly Pear is a cactus, hence the name. This brand was the first prickly pear available on the market, but there are a few others that have appeared that works as well in this drink.

Ingredients

- 1.5 oz Cruzan Single Barrel Estate Rum

- 1 oz Cruzan Estate Light (2 years)

- 1/4 oz Cruzan Blackstrap Rum

- 1/2 oz Bols Orange Curaçao

- 1 oz Lyons Fruitpure Prickly Pear Puree

- 1 oz fresh orange juice

- 1 oz unsweetened pineapple juice

- 3/4 oz fresh lime juice

- 1/2 oz simple syrup

- 2 dashes Angostura Bitters

- 1 oz Club Soda


Directions

1) Combine all ingredients except club soda into cocktail shaker.

2) Shake with ice cubes.

3) Strain into large (14 oz) Hurricane glass filled with crushed ice.

4) Add club soda and stir (with plastic cactus stirrer, preferably).

5) Garnish with orange slice and pineapple shrub.

Le Mai Tai

This is my "Martinique remix" of the classic Trader Vic Mai Tai recipe (from 1944) served up at Tiki Tuesdays.

1 drink


Ingredients

- 1.5 oz Clément Rhum Agricole

- 1.5 oz Clément VSOP Rhum Vieux Agricole

- 0.5 oz Clément Créole Shrub

- 0.75 oz lime juice

- 0.25 oz orgeat syrup

- 0.25 oz Clément Sirop de Canne

- 1 dash Bittermens 'Elemakule Tiki Bitters


Directions

1) Shake all ingredients with ice in shaker.

2) Strain into a 14 oz Tiki mug filled with crushed ice.

3) Garnish with fresh mint sprigs.
